Classic French Madeleines

Ingredients

·       2 large eggs

·       100g caster sugar

·       1 tsp vanilla extract

·       120g plain flour

·       1 tsp baking powder

·       Pinch of salt

·       100g unsalted butter, melted and cooled

·       Zest of 1 lemon (optional)

·       Icing sugar, for dusting

Method

1.     Whisk the eggs and sugar until pale and fluffy.

2.     Stir in the vanilla and lemon zest.

3.     Fold in the flour, baking powder and salt.

4.     Gently mix in the melted butter until smooth.

5.     Cover and chill the batter for at least one hour.

6.     Spoon into a buttered madeleine tin, filling each mould about three-quarters full.

7.     Bake at 190°C for 9–11 minutes until the signature little hump appears and the edges are lightly golden.

8.     Cool slightly before dusting with icing sugar.

Serve them warm with your favourite tea or café au lait.
